Pimiento cheese

Given that you can make really good pimiento cheese in about ten minutes, it seems ludicrous to me to pay what a good grocery store will charge for it. Or to pay what a good grocery store will charge for anything everyone’s Southern grandmother used to make herself.

If this makes more than you can eat with crackers, try it in a grilled cheese sandwich.

    • 1 pound cheddar cheese, mild or sharp as you like, grated
    • 8 ounces cream cheese (it helps it if is softened a bit)
    • mayonnaise to taste

    Mash together in a large bowl. Use only enough mayonnaise to thin it to a spreadable consistency.

    • 1 8-ounce jar pimientos, undrained
    • 1 teaspoon salt
    • ½ teaspoon garlic powder
    • ¼ teaspoon cayenne, or to taste

    Stir in. The seasonings are to taste, but you want it lively.

  1. Chill until needed. It will keep a few days in the fridge.
